🌶️ Easy West African One-Pot Tomato Chicken
Ingredients:
• 2 chicken thighs or breasts, cut into chunks
• 1 onion, sliced
• 2 tomatoes, chopped (or 1 cup canned tomatoes)
• 1 small bell pepper, chopped
• 1 garlic clove, minced
• 1 teaspoon paprika
• 1 teaspoon curry powder
• Salt and pepper
• 1–2 tablespoons oil
Steps:
1. Heat oil in a pot and sauté the onions and garlic until soft.
2. Add the chicken, salt, pepper, paprika, and curry powder. Cook until lightly browned.
3. Add tomatoes and bell pepper. Stir and let it simmer for 10–12 minutes.
4. Add a splash of water if it gets too thick.
5. Serve with rice, bread, or boiled potatoes.
A simple weeknight dish enjoyed across West Africa — quick, flavorful, and easy to adapt.
